Our bread line – Naturally Leavened and Goods with Yeast 

In the stores these are easily identified by the color coded tag on the bag. Desem is the Flemish/Dutch name for naturally leavened bread. It is an »old world« style bread that contains no commercial yeast. The starter used in this bread was originally cultured by the micro-organisms on the grain. A portion of this culture is added to every dough. It is a rustic, free form, hearth baked loaf. The bread with yeast is made in the conventional way with commercial yeast. We use the traditional yeast, which makes for slower fermentation than instant yeast. We do this so that you will have more nutritional value from this whole grain bread.

Hazelnut Flax Desem Bread

 

Please take note of this statement found on all our products containing spelt.

»Spelt is an ancient grain classified in the wheat family.«

Spelt (Triticum spelta) has characteristics uniquely different than the common modern wheat (Triticum aestivum). Health Canada's new Enhanced Allergen Regulations require that all gluten sources must be named. Since wheat is the family name in which spelt is classified, it must be named. This is for the protection of people with celiac disease.

 

 

An asterisk * indicates it is an organic ingredient.

All seeds are soaked overnight for greater nutritional value (except hemp).

All desem bread is free form – baked on the hearth – unsliced.

Care and storage of desem bread: it stores best at room temperature (up to a week) or in the freezer.

Suggestion: slice it as you desire and freeze it. Take out the slices as you need them. Or, you could cut it into halves or quarters and freeze it this way.

 

All the yeasted, pan formed bread is sliced, except the Cinnamon Raisin bread. 

Store yeasted bread in the refrigerator for optimum freshness or freeze it for longer storage.
